Eating in Kagoshima

Regional ramen specialties are a key part of Japan’s food culture, and just about every part of the country has its own local variety – or two. That is especially true for the southern Japanese island of Kyushu, home to the famous tonkotsu ramen of Hakata, Fukuoka – made famous by chains like Ichiran and Ippudo. Pork ramen, often made by extracting every drop of flavor from pork bones, is undeniably the region’s specialty. But Hakata isn’t the only place to get good ramen in Kyushu.
Zabon Ramen

Kagoshima is one of the biggest prefectures in Kyushu, so it only makes sense that they go big when preparing their ramen! Unlike the many shops that concentrate on pork bones, Zabon Ramen actually uses pig heads to give their broth a unique depth of flavor! And while pork might give off the image of being heavy, oily, and even a little greasy, Zabon Ramen’s ramen is surprisingly light despite the rich tonkotsu flavor.

Zabon also arranges their ramen differently from most shops, putting all the toppings at the bottom of the bowl, so the creamy tonkotsu broth mixes in with all the ingredients to give each bite extra flavor. You might be surprised at just how different things taste when they’ve been soaking at the bottom of a bowl of flavorful broth.

The food was clearly top-notch, but during this visit, the Japankuru team was also totally charmed by the people! Kyushu is an island full of friendly folks, and the people at Zabon Ramen are no exception. Pay for the meal in advance, then sit back, relax, and enjoy the comfortable atmosphere!

Zabon Ramen has been a favorite of Kagoshima locals for over 70 years, so if you get the chance to plan your own Kagoshima food tour, you won’t want to miss this go-to ramen spot!
